These individual servings are perfect because they bake so quickly! Also you can tailor the ingredients (add mushrooms, peppers and onions) to some, but not all of the servings based on your family's preferences.

Original recipe makes 40 Servings
nonstick; cooking spray
8 largeEggs
1/2 cupwhole milk
1/2 teaspoonfreshly ground black pepper
1/4 teaspoonsalt
4 oz.thinly sliced ham; chopped
1/3 cupfreshly grated parmesan
2 Tablespoonsfresh parsley

Mini Frittatas Preparation

Preheat oven to 375 degrees.

Spray mini muffin tins with nonstick cooking spray.

Whisk eggs, milk, pepper and salt in a large bowl to blend well. Stir in the ham, cheese and parsley.

Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture is just set in the center, about 8-10 minutes. (Cook longer if you like your eggs to set up more).

Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

Really nice, even for someone who isn't a huge egg lover. I love that you can put whatever you want in it, next time I will add some salsa as it could use a little more flavour.

Serving size threw me off since I consider a serving the equivalent of one meal, so I adjusted it to 20 for 4 of us and used a regular muffin tin. Made 7 total, but they were very good.

Whoops wrong recipe! I meant this for one with egg whites! Used the same idea only only egg whites and no whole milk. Still great idea!

Love that you can tailor individual prefs for family members. Fill closer to 1/2 full or they 'poof' up over the top of the pan.
