Preheat oven to 375 degrees.
Spray mini muffin tins with nonstick cooking spray.
Whisk eggs, milk, pepper and salt in a large bowl to blend well. Stir in the ham, cheese and parsley.
Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture is just set in the center, about 8-10 minutes. (Cook longer if you like your eggs to set up more).
Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

chrissieashmore9 3 months agoSuper fast, super easy, Very flexible:) Me and my fiance made this for breakfast it was Great:) we used. Small cake pan though and cooked it for 28minutes. We melted cheddar on it and Will be adding A Lot more ingredients next time. Salsa or taco sauce is Great with it too:)
mogriff1 4 months agoI love this recipe! This time i halved the recipe and used breakfast sausage which I cooked first then pulsed in the food processor. I also added a whole onion (which I pureed in the food processor). I poured it in a pie dish and baked for 25 min. My hubby and mom loved it also and had seconds!

mogriff1 4 months agoThis was so good! I added in onion and smoked turkey sausage which I pulsed in the food processor. I baked it in a mini pie dish. Phenominal flavor and texture!

LavenderWand 6 months agoA great way to use up eggs. I omitted the last 3 ingredients and added spinach, mushrooms and an Italian blend of cheeses (1/2 cup each). Still not cheesy enough for me so I melted more cheese on top. Onion would've improved it even more. Used reg muffin tins, 16- 20 min as reviewer suggested.
kgarber 6 months agoReally nice, even for someone who isn't a huge egg lover. I love that you can put whatever you want in it, next time I will add some salsa as it could use a little more flavour.

stevehill1 7 months agoServing size threw me off since I consider a serving the equivalent of one meal, so I adjusted it to 20 for 4 of us and used a regular muffin tin. Made 7 total, but they were very good.
