These individual servings are perfect because they bake so quickly! Also you can tailor the ingredients (add mushrooms, peppers and onions) to some, but not all of the servings based on your family's preferences."So yummy!! Made these Christmas morning and everyone gobbled them up! I used a regular 12 cup muffin pan instead, parsely flakes instead of fresh, crumbled sausage and bacon instead of ham, and finely shredded cheddar & monterey jack cheeses instead of parmesan. Wow, they were good! The sausage really kicked up the flavor! The family loved them!" - Mrs_Reasor

Mini Frittatas Preparation
Preheat oven to 375 degrees.
Spray mini muffin tins with nonstick cooking spray.
Whisk eggs, milk, pepper and salt in a large bowl to blend well. Stir in the ham, cheese and parsley.
Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture is just set in the center, about 8-10 minutes. (Cook longer if you like your eggs to set up more).
Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.
