Grilled chicken in a homemade honey mustard sauce topped with crisp bacon, mushrooms and Colby-Monterey Jack cheese.
Preheat oven to 350 degrees F.
Rub the chicken breasts with the seasoning salt, cover and refrigerate for 30 min.
In a medium bowl, combine mustard, honey, mayo, corn syrup and dried onion flakes.
Reserve half.
Heat oil in a large skillet over medium heat. Saute seasoned chicken breasts for 4-5 min per side or until browned. Cover a large baking sheet with foil. Transfer the cooked chicken breasts onto the baking sheet. Brush the chicken with the honey mustard sauce and layer with bacon, mushrooms and then top with shredded cheese.
Bake in oven for about 15 min or until chicken juices run clear.
Serve chicken over rice, sprinkled with green onion and a side of reserved honey mustard sauce for dipping or drizzling.
