1/4 cuprice wine vinegar
2 tablespoonssmooth peanut butter
1 tablespoonchopped fresh ginger
2 teaspoonschipotle chile canned in adobo, pureed
1 tablespoonsoy sauce
1 tablespoonhoney
2 teaspoonstoasted sesame oil
1/2 cupcanola oil
1/2 headNapa cabbage, shredded
2 carrots, shredded
1/4 poundsnow peas, julienned
1/4 cupcoarsely chopped fresh cilantro leaves
1/4 cupthinly sliced green onions
2 cupsshredded chicken
1/2 cupchopped roasted peanuts
1/4 cupchopped fresh mint
1/2 headromaine lettuce, shredded

Asian Chicken Salad Preparation

Whisk together the vinegar, peanut butter, ginger, chipotle pepper puree, soy sauce, honey, sesame oil, and canola oil in a med bow. Season with salt and pepper to taste. Combine cabbage, lettuce carrots, snow peas, cilantro, and green onion in a large bowl. Add the dressing and toss to combine.

Transfer to a serving platter and top with shredded chicken, chopped peantus, and mint.
