Asian Chicken Salad
Ingredients
Original recipe makes 8 Servings
| 1/4 cuprice wine vinegar |
| 2 tablespoonssmooth peanut butter |
| 1 tablespoonchopped fresh ginger |
| 2 teaspoonschipotle chile canned in adobo, pureed |
| 1 tablespoonsoy sauce |
| 1 tablespoonhoney |
| 2 teaspoonstoasted sesame oil |
| 1/2 cupcanola oil |
| 1/2 headNapa cabbage, shredded |
| 2 carrots, shredded |
| 1/4 poundsnow peas, julienned |
| 1/4 cupcoarsely chopped fresh cilantro leaves |
| 1/4 cupthinly sliced green onions |
| 2 cupsshredded chicken |
| 1/2 cupchopped roasted peanuts |
| 1/4 cupchopped fresh mint |
| 1/2 headromaine lettuce, shredded |
Asian Chicken Salad Preparation
Whisk together the vinegar, peanut butter, ginger, chipotle pepper puree, soy sauce, honey, sesame oil, and canola oil in a med bow. Season with salt and pepper to taste. Combine cabbage, lettuce carrots, snow peas, cilantro, and green onion in a large bowl. Add the dressing and toss to combine.
Transfer to a serving platter and top with shredded chicken, chopped peantus, and mint.
