Quarterback Quiche - Lite

A simple, very easy to make, quiche. This is the low-fat version, but you won't miss the extra fat and calories. This one only has about 150 calories and less than 6 grams of fat per serving. And it's still very buttery and delicious.

Great for breakfast, brunch, or even dinner. You can also double the recipe and make it in a foil pan for tailgates or picnics, just cook it ahead of time and then reheat over a sterno.

3 LargeEggs; Eggland's Best
2 TablespoonsBest Life Buttery Spread; broken into small pieces
1/2 cupHeart Smart Bisquick
1 1/2 cupsSkim Milk
4 slices97% Fat Free Cooked Deli Ham; cut into small pieces
1/2 cupKraft Fat Free Shredded Cheddar; Mild, Medium, or Sharp

Quarterback Quiche - Lite Preparation

Mix or blend eggs, butter, milk, and bisquick until thoroughly mixed. Pour into a pie pan that's been sprayed lightly with non-stick cooking spray. Even place and submerge ham and cheese throughout the quiche.

Bake at 350 degrees for 45 minutes. Let stand for 1-2 minutes. Cut into 6, pie shaped servings.

Tip: Add a 1/4 cup of chopped spinach for extra flavor and color.
