Original recipe makes 6 Servings
1 cupcouscous
1 tbsp.olive oil
1 cupvegetable stock; or water
1/4 tsp.salt
1 eachRoma tomato; diced
1/2 cupred onion; diced
1 tsp.mint; chopped
1 tbsp.parsley; chopped
2 tbsp.white balsamic vinegar
4 ouncescrumbled feta cheese; Alouette

Crumbled Feta Couscous Salad Preparation

In a medium sauce pan bring water or vegetable stock to a boil then add couscous stirring quickly. Remove from the heat and cover, let stand for 4-5 minutes.

Remove the lid and stir in the olive oil. Pour cooked couscous in a large bowl to chill, stir occasionally. When cooled stir in remaining ingredients and chill completely.
