Rogan Josh Curry Paste
|2 cloves of garlic|
|a; thumb-sized piece of fresh root ginger|
|75 gramsroasted peppers; from a jar|
|1 teaspoonsmoked paprika|
|2 teaspoonsgaram masala|
|1/2 teaspoonsea salt|
|2 tablespoonsgroundnut oil|
|2 tablespoonstomato pur?e|
|1 fresh red chilli|
|a; small bunch of fresh coriander|
|Spices; for toasting|
|2 teaspoonscumin seeds|
|2 teaspoonscoriander seeds|
|1 teaspoonblack peppercorns|
Rogan Josh Curry Paste Preparation
Peel the garlic and ginger
Lightly toast the cumin, coriander and peppercorns in a dry frying pan on a medium heat.
until golden brown, then remove the pan from the heat.
Grind the toasted spices with a pestle and mortar until fine, or put them into a food processor and process to a powder
Process the toasted spices in a food processor with the rest of the ingredients until you have a smooth paste
