Original recipe makes
2 cloves of garlic
a; thumb-sized piece of fresh root ginger
75 gramsroasted peppers; from a jar
1 tablespoonpaprika
1 teaspoonsmoked paprika
2 teaspoonsgaram masala
1 teaspoonturmeric
1/2 teaspoonsea salt
2 tablespoonsgroundnut oil
2 tablespoonstomato pur?e
1 fresh red chilli
a; small bunch of fresh coriander
Spices; for toasting
2 teaspoonscumin seeds
2 teaspoonscoriander seeds
1 teaspoonblack peppercorns

Rogan Josh Curry Paste Preparation

Peel the garlic and ginger

Lightly toast the cumin, coriander and peppercorns in a dry frying pan on a medium heat.

until golden brown, then remove the pan from the heat.

Grind the toasted spices with a pestle and mortar until fine, or put them into a food processor and process to a powder

Process the toasted spices in a food processor with the rest of the ingredients until you have a smooth paste
