Original recipe makes
| 2 cloves of garlic |
| a; thumb-sized piece of fresh root ginger |
| 75 gramsroasted peppers; from a jar |
| 1 tablespoonpaprika |
| 1 teaspoonsmoked paprika |
| 2 teaspoonsgaram masala |
| 1 teaspoonturmeric |
| 1/2 teaspoonsea salt |
| 2 tablespoonsgroundnut oil |
| 2 tablespoonstomato pur?e |
| 1 fresh red chilli |
| a; small bunch of fresh coriander |
| Spices; for toasting |
| 2 teaspoonscumin seeds |
| 2 teaspoonscoriander seeds |
| 1 teaspoonblack peppercorns |
Rogan Josh Curry Paste Preparation
Peel the garlic and ginger
Lightly toast the cumin, coriander and peppercorns in a dry frying pan on a medium heat.
until golden brown, then remove the pan from the heat.
Grind the toasted spices with a pestle and mortar until fine, or put them into a food processor and process to a powder
Process the toasted spices in a food processor with the rest of the ingredients until you have a smooth paste
