An Ecuadorian delight, it's a nice crispy on the outside, smooth and cheese filled on the inside potato cake. Try it with my Ecuadorian Pork!

Ingredients
| 3-4 WholePotatoes; washed, peeled, washed again & cubed |
| 4 SprigsGreen Onion (optional); lightly minced |
| 1 Pinch(es)Salt; to taste |
| 2 CupsMozzarella Cheese (or your favorite); shredded |
| 3 TBSCanola Oil (or a good frying oil that you like); as needed |
Potato Cakes Preparation
Boil the potatoes in salted water until soft. Drain and mash (DO NOT put any additives (ie. butter and/or heavy cream/milk)); feel free to season with more salt, if necessary and some pepper (REMEMBER to taste, taste, taste). [optional: for a less intense "oniony" flavor; Heat 1/4 tsp of butter in a pan and sauté them to your desired consistency {make sure all the butter is evaporated before continuing}]. Add the onions to the mashed potatoes. Shape the mashed potatoes into balls about the size of a tennis ball or to whatever size and amount your going to be eating. Stuff each of the potato balls with the cheese, then form them with your hands into cakes/patties about 1 inch thick. Chill in the refrigerator for about 15 minutes to harden a little, it just makes it easier to work with when your cooking them. In about 1 TBS of oil (just enough to cover the bottom of your non-stick pan {we're not deep frying here}), saute/fry the potato cakes until they are golden brown on both sides. Voila!

Get rid of as much bagged, pre-frozen/cooked, processed, pumped junk labeled a product that's main ingredients consist of nothing but unhealthy, unknown, additives, preservatives, by-products and just junk. Use fresh, healthy ingredients, get down and dirty in the kitchen....
Get the family involved too!!! My children 8, 4 and 2 love doing the littlest simplest things in the kitchen; It is literally a family event for everyone here to help out in some way, shape or form for supper (even if its just cleaning or setting the table)... FOOD IS FUN! Who knows, the next Ramsay, Lagasee, Flay or Ray may be 3 foot nothing right in your own home, for those with children (there are 1000's of great Chef's in the world today, I just named a few off the top of my head, so if I offended you by omitting one, I'm sorry). It will also be an invaluable learning experience that will change their lives (thanks MOM!!!)...
Those without little ones, invite the family around you over and cook together, have a potluck, invite the friends.
