Winging It Bean Salad
If you want a recipe that's quick, easy and relatively cheap, but exploding with flavor, healthy and beautiful to look at, this is the ticket.

| 1.875 cup (15oz can)dark red kidney beans,; Drain & rinse |
| 1.875 cup (15oz can)cannellini beans; Drain & rinse |
| 1 dozen or sopickled green beans (garlic-spice); Slice on the bias into 1" lengths |
| 1/2 mediumgreen bell pepper; Slice into 1/2" chunks |
| 1 Tbspcapers; Chop finely |
| 2 Tbsppine nuts; Toast in pan on low burner, chop roughly |
| 1/2 small jarmarinated artichoke hearts; Chop off any tough parts, slice paper thin |
| 10 clovespickled garlic; Slice paper thin lengthwise |
| 1/3 mediumcucumber; Seed, dice small |
| 1/2 smallonion; Brunoise small dice |
| 1 cupfresh bean sprouts; Loose cup, rinsed |
| Dressing |
| 1 tspblood orange vinegar |
| 2 tspred wine vinegar |
| 1/4 cupbasil & garlic grapeseed oil |
| 1 Tbsplemon grapeseed oil |
| 1/2 mediumlemon; Juice |
| 1 healthy pinchdried tarragon |
| 1 healthy pinchdried basil; (chopped fresh would be nice) |
| 1/2 tspsalt |
| 1 tsppoblano pepper; Roast & finely chop |
Winging It Bean Salad Preparation
Combine all main ingredients, fold gently and minimally in a good-sized bowl. Combine dressing ingredients in a lidded jar, shake vigorously and pour over salad. Refrigerate for an hour, toss gently and serve. A little chopped fresh parsley for garnish would be nice. I'll probably do that and maybe add some white flaked tuna as well next time. Or maybe a bit of diced & rendered pancetta. Hmmm.
