Schnitzel
Original recipe makes 10 Servings
| 10 pork tenderloin cutlets; pounded flat |
| 4 Eggs |
| 15 Arrowroot cookies; crushed |
| 1/2 tspsalt |
| 1 tspcayenne pepper |
| 3 cupsolive or canola oil |
Schnitzel Preparation
1. In a cast-iron pan, heat up the oil. Make sure there is enough to immerse the pork.
2. Dip the pork (both sides) in the egg, then the crushed cookies.
3. Season both sides of the pork with the salt and cayenne pepper.
4. Deep fry both sides in the oil. Make sure not to burn it.
Also make sure the oil doesn't burn. If it does, dispose of it and start fresh.
You can squeeze some lemon on it, or you can enjoy it with apple sauce.
