Just like in Greece!
In a large bowl add h20, olive oil, yeast, sugar and salt. Let stand for five minutes or until yeast is active.
Using your hands, gradually add the flour into wet mix and knead until dough pulls away from the sides of the bowl. Cover and leave in war spot for a 30 minute rise.
Divide into 6 pieces and roll out into 8-10 in rounds, 1/4 inch thick. Dust with cornmeal and poke with a fork, but not all the way through.
Place a heavy pan on medium high and warm. Add some veg oil to a small bowl and dunk a towel into it to grease the pan.
Put dough in pan, cook till puffs and bubbles, flip and cook other side. Put into a warm towel to keep fresh/warm.
