28 ounceTomato sauce
8 ounceTomato sauce
1 teaspoonOregano
1 teaspoonBasil
1/4 teaspoonSalt
4 clovesGarlic; chopped
Black pepper; to taste
-- Mix above ~~amp cook low 1/2 hour --
2 clovesGarlic; minced
2 Egg; beaten
1 teaspoonSalt
1 teaspoonBasil
1 poundGround beef
1/2 poundItalian sausage; Bob Evan's Mild
1/2 cupDry bread crumbs
1/2 cupRomano cheese; parmesean will work too
2 teaspoonsExtra virgin olive oil

Mom's Homemade Spaghetti & Meatballs (Band Aide - Optional!) Preparation

Beat eggs is a medium bowl. Add garlic, salt, and basil. Combine beef and sausage in a large bowl. In a third bowl, combine bread crumbs and cheese. To the meat mixture, add the eggs and mix well. Stir in the dry mix and combine with olive oil. Stir well. Roll into small 2' balls and cook softly. Add to sauce and simmer low, one hour.

Notes

The first year Uncle George brought Aunt Leigh home for Christmas, we really liked her. In fact, we plan on keeping this wife and dumping Uncle George if this doesn't work out. Aunt Leigh is a trained pysician's assistant and taught my young children much about anticeptic and prophalachtic techniques on that trip. While making this dish with my daughter Leah one night, Aunt Leigh and I really bonded. As Aunt Leigh is a HUGE football fan, we decided to make odd sized meatballs. We had to continuously remind Leah that football sized meatballs were just fine. After 10 minutes of looking at Leah so perplexed, Aunt Leigh asked, "Leah, what's the matter....?".she said "I was just wondering what happened to the band aide on my boo boo?" I was looking at four pounds of meat that I was going to have to throw out...how could she let me serve this meat, even though I was sure we would cook off the mystery germs. Well, at the end, Aunt Leigh took pity on me and said, "no worries, your band aid is right here" (burried a bit in the mix) . She pulled it out, threw it out and went on making meatballs. After about three minutes of quiet I couldn't hold myself any longer...I started to snicker and didn't really stop laughing my guts out until the day Aunt Leigh left 24 hours later. In fact we have been happily laughing our guts out for years now!
