Cannellini Bean Salad
Ingredients
Original recipe makes 6 Servings
| 3 cupsCannellini Beans; cooked or canned |
| 2 tbsFresh rosemary; chopped |
| 2 tbsOlive oil |
| 1 cupOnion; thinly sliced |
| 2 tbsOlive oil |
| 1/2 cupProsciutto; chopped |
| 1/4 cupRed wine vinegar |
| -- Salt and Pepper to Taste --; to taste |
Cannellini Bean Salad Preparation
In a larg skillet, combine beans, rosmary, olive oil, salt and pepper. Cook gently about 5 minutes. Transfer to a bowl and set aside.
To the skillet add olive oil, onion, prosciutto. Cook on medium for 5 minutes. Add beans, vinega,r salt and pepper to taste. Simmer for 12 minutes, covered.
Serve warm or cold.
