Cannellini Bean Salad

3 cups Cannellini Beans; cooked or canned
2 tbs Fresh rosemary; chopped
2 tbs Olive oil
1 cup Onion; thinly sliced
2 tbs Olive oil
1/2 cup Prosciutto; chopped
1/4 cup Red wine vinegar
-- Salt and Pepper to Taste --; to taste

Original recipe makes 6 Servings



In a larg skillet, combine beans, rosmary, olive oil, salt and pepper. Cook gently about 5 minutes. Transfer to a bowl and set aside.

To the skillet add olive oil, onion, prosciutto. Cook on medium for 5 minutes. Add beans, vinega,r salt and pepper to taste. Simmer for 12 minutes, covered.

Serve warm or cold.
