Chile Con Queso Mini-Bites
|vegetable oil to coat pan|
|1/2 cupchopped tomato|
|1/4 cupminced green onion|
|1 clovegarlic, minced|
|4 eggs, beaten|
|1/2 cupshredded cheddar cheese|
|1/2 cupshredded monterey jack cheese with jalapeno pepper|
|1 teaspoonchili powder|
|1/2 teaspoonground cumin|
|1/8 teaspoonred pepper|
|1 4 oz canchopped green chiles, rinsed and drained|
Chile Con Queso Mini-Bites Preparation
Heat oil over med-hi heat until hot. Add tomato, green onions, and garlic; saute until onions are tender.
Combine tomato mixture, eggs, and next 6 ingredients in amed bowl; stir well. Spoon 1 T mixture into mini muffin pans coated with cooking spray.
Bake at 425 for 8-10 min or until centeres are set. Remove from oven; let cool in pans 1 min. Loosen edges with a knife, and remove from pans; serve warm.
