Spinach and Feta Cheese Stuffed Chicken

Ingredients
| 2 chicken breasts; boneless, skinless |
| 1 cupfresh spinach |
| 1/4 cupcrumbled feta cheese |
| 2 tablespoonsgarlic; minced |
| 2 tablespoonsextra virgin olive oil |
| 1 tablespoonsalt and pepper |
Spinach and Feta Cheese Stuffed Chicken Preparation
Preheat oven to 400 degrees F.
Place each piece of chicken between two pieces of wax paper. Using a mallet pound each piece until flat, set aside.
Warm large non-stick skillet to medium heat, add extra virgin olive oil and garlic, cook 30 seconds. Drop spinach into pot and cook two minutes or until wilted. Remove from heat. Place cooked spinach on top of chicken, then sprinkle feta cheese over spinach. Roll each piece of chicken like a burrito, poke with toothpicks to allow chicken from unraveling.
Using leftover garlic from skillet rub on chicken. Flavor with salt and pepper. Place in an oven-safe baking dish.
Place on middle oven rack. Cook 20 minutes, uncovered.
