Buy fresh pineapples. I sometimes cut them lengthwise, scoop out the pineapple to form bowls, and serve each guest a dessert in their own pineapple.
Pre-scoop ice cream into serving portions and refreeze (in a pan or dish) because you are using a hot topping.
Melt butter in a pan. Add sugars. Stir until a caramel forms. Add pineapple, pecans & rum. I do this before the guests arrive. When ready to serve, warm mixture, slice bananas into it. Add hot brandy to flame Serve over ice cream with a spoon of whipped cream on top. Makes 6-8 desserts.
