A fresh, spicy delite. Easy and quick to prepare, incredibly flavoursome.
Put a wok or deep saucepan on the hob on a medium heat and add 4tbs of Sesame oil. Once hot add the Chopped Chicken breast and Green Curry Paste. Stir continuously for 2-3 minutes. Add the Coriander, Chillies and spring onions and stir regularly for around 6 minutes or until the chicken begins to brown on the outside. Stir in the coconut milk and allow to simmer for 2-3 minutes. Now add your stock. Bring the mixture to a light simmer and allow it to do so for a further 5 minutes, stirring occasionally. Meanwhile, take a small saucepan and add your butter, bring to a medium / low heat until the butter melts, stir in the flour and mix until it becomes a thick paste. Take your flour and butter mixture off the heat and add to the simmering curry. Keep stirring the mixture until you notice that the sauce has thickened (around 4 or 5 minutes usually). Add your prawns and, if using, your lime juice. allow this to simmer on a medium heat for a further five minutes or so. Turn off the heat and allow to stand for one minutes before serving. Perfect with boiled Basmati rice and Naan Bread.
How thick you want your curry sauce to be is entirely up to you and a matter of preference. If needed, add more of the flour and butter mixture to thicken. The key to the success of this recipe is to keep stirring.
