This is a healthy snack to keep on hand for yourself or growing kids that are hard to keep nutritional snacks on hand for. It freezes well so a big batch can be made at once and saved for later use. It's not as sweet as some are used to but it quickly grows on even the pickiest eaters!
Preheat oven to 375 degrees.
Beat eggs until foamy then add sugar, oil, yogurt, zucchini, carrot, applesauce, cinnamon and dried fruit if desired. Mix well. In a separate bowl, sift together flour, salt, baking powder, baking soda and wheat bran. Add dry ingredients slowly to the yogurt mixture and mix until moist. Pour into 2 greased and floured 9x5 loaf pans. Bake for 50-55 minutes. Loaves should be golden brown. Take out of pans to cool. Refrigerate for best results.
You can substitute whole wheat flour for the white flour to make this even healthier.
