Corn Casserole
Ingredients
Original recipe makes 8 Servings
| 1 canWhole corn; drained |
| 1 canCream style corn |
| 2 largeEggs; beaten |
| 1 packageCorn muffin mix; Jiffy brand works |
| 1 mediumOnion; chopped fine |
| 1 stickOleo (margarine) |
| 1 pintSour cream |
| 2 cupsCheddar cheese; grated |
| dashSalt |
| dashPepper |
Corn Casserole Preparation
Preheat oven 350 degree
Saute onion in butter. Fold corn into beaten eggs.
Add Jiffy mix into egg mixture and then add onion
Stir in sour cream and some of the cheddar cheese
Pour into well greased 9x13 pan
Top with remaining cheese and sprinkle with paprika
Bake 40 minutes at 350 degrees
After removing from the oven --- cover for a few minutes before serving.
