Quick and delicious light Italian pork chops. A great meal to serve with crusty bread
Heat olive oil in large skillet over medium high heat.
Add garlic and fennel seeds; cook quickly, 30 seconds.
Add pork chops and brown, 2 minutes each side.
Add white wine, deglazing pan around chops, and let cook off about 3 minutes.
Add tomatoes, olives, salt and pepper.
Cover and cook 3 minutes.
Turn chops. Cover and cook 3 more minutes.
Turn chops. Cover and cook 3 more minutes.
Remove chops to plate.
Quickly add spinach to hot tomato and olive mixture in pan.
Fold in until spinach is just wilted.
Divide spinach and sauce into 4 portions. Place chops on top. Serve immediately.
