This is the tastiest pasta salad ever, with a coating of ricotta, marinated mushrooms, broccoli, carrots, and optional artichoke hearts. Great for bringing to gatherings. It will disappear quickly.

Original recipe makes 10 Servings
16 ozcorkscrew pasta; chilled and slightly oiled
12 wholemarinated mushrooms; (optional)
1/4 green pepper; chopped
2 carrots; chopped
1/3 bunchbroccoli flowers; shredded
1/2 cupparmesan cheese; grated
1t fresh Italian parsley; chopped
1 lbricotta cheese
3 Tolive oil
1/3 cupbalsamic vinegar
1/4 cupreal mayo
1 tdried dill weed
to taste garlic powder
to taste salt and pepper

Corkscrew Pasta Salad with Ricotta Preparation

1) Stir together "Dressing" ingredients (ricotta cheese, olive oil, balsamic vinegar. mayo)

2) Fold dressing ingredients into cold pasta.

3) Fold in remaining ingredients.

4) Serve immediately, optionally garnished with artichoke hearts, avocado, or cherry tomatoes.
