Chicken breast covered in a sharp, flavorful lemon butter sauce! Beautiful and delicious.
Start off by pounding your chicken breasts to about 1/2-in. thick. Salt and pepper each side of the breasts generously, cayenne to taste, then dredge each breast in flour. Pour your olive oil into heavy skillet and place it on the stove at medium-high heat. Once the oil is hot and starts to shimmer (or a drop of water sizzles when dropped into the oil) place your chicken into the pan. If the chicken doesn't sizzle in the oil, you didn't let it get hot enough. Turn the heat down to medium and cook for about 4-5 minutes on each side. Times will vary depending on the thickness of your chicken, but you want it to brown on each side and be cooked thoroughly on the inside. Remove chicken to a warm plate and cover with a paper towel.
Leaving your pan on medium heat, place in the capers. For more flavor, after placing in the capers take a fork and smash about 1/2 of them in the pan. After the capers sizzle for about 30 seconds, pour in the white wine to de-glaze the pan, boil that for about 2 minutes or until it reduces by half. Next pour in your lemon juice, cold-water or chicken stock, and the butter cut in chunks. Turn the heat down as low as it goes making sure to keep the sauce moving until the butter melts. Put in your fresh parsley.
Now take the chicken from the plate, pour any juices that may have pooled on the plate into the sauce, and put the chicken back in the pan. Cover each breast with sauce and heat for just a minute. Once breasts are heated back through, turn off heat on the stove, remove chicken, and serve,
Adjust the ration of lemon/water/wine/butter to your liking! Make sure each side of the chicken is dredged in enough flower to be crispy but not too thick.
