Grilled Mojo Carne Asada

A juicy and tender flank steak. Marinated in a Mojo mixture with slight flavor of orange and lime. Grilled and garnished with cilantro. Serve with fideo or rice, beans, and pico de gallo.

Mojo Marinade
3/4 CupGoya Mojo (Criollo) Marinade
2 TbspSimply Orange Juice; or other OJ with a sweet flavor, no pulp
3 DropsReal Lime Juice
2 tspGarlic Powder with parsley
2 tspKosher Salt
2 pinchMrs. Dash Southwestern Chipolte Season
1 dashcayenne pepper powder
Carne Asada
2 lbFlank Steak
sprigsCilantro; for garnish only

Grilled Mojo Carne Asada Preparation

Make Mojo Marinade in a large ziplock bag. Add all ingredients to bag and mix. Place flank steak in marinade bag and seal. Marinade for 30 minutes on counter top, turning the bag frequently to ensure the marinade evenly covers the meat.

Preheat covered grill at high temperature. Place marinated flank steak on the top rack or at least 6-8 inches from high heat source. Cover grill. Check every few minutes until the blood starts to run out the top of the steak. Flip and grill covered until charred on the edges and still slightly thick and tender in middle.

Remove from grill and let sit for 5 minutes uncovered. Slice thin (against the grain) add a cilantro garnish, and serve with hot tortillas and pico de gallo.

Notes:

Do not overcook. Juices will sit on top of the steak and that's perfect. Meat will be slightly red in the thickest center. It is better to slice and throw on a hot griddle before serving than to overcook on the grill. Slice against the grain only or it will make the meat tough to chew. Do not substitute Skirt Steak, too tough.
