A labor of love over the years to figure out how to make my favorite Cajun Pasta dish that's found at The Cheesecake Factory. I believe I'ts a success! It's really, really hard to stop eating this heady dish..

First, we get the pasta al dente:
The process is very simple. Boil 4-6 cups of water (with about a teaspoon of salt). Once the water is boiling put the linguini in the pot. DO NOT BREAK THEM. As they heat up they will bend. Help them with a kitchen fork by stirring slowly. Make sure your water is boiling all the time. Sometimes when you add the linguini, the water stops bubbling. Raise the temperature a bit, and then lower it once you get it boiling again. You should cook the linguini at medium temperature average. Depending on how cooked you want your linguini, this takes place in 8-10 minutes. Most people prefer "al dente". Thsi means, that point where the pasta is not raw anymore but still has a nice hard texture. Once the time is passed, rinse to get rid of the water. Voila!
Place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, saute chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.
Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.
Pour over hot linguine and toss with Parmesan cheese.

07tina 3 weeks agoThis was very delicious! I will definitely make this again. To simplify I cooked the chicken in butter and olive oil and sprinkled the Cajun seasoning on the chicken while in the pan. Then I followed the recipe as is. Next time I would followed throw on some fresh mushrooms. Very tasty!

cokhmatov 1 month agoThis was amazing yummy. One pointer: toss the chicken and the Cajun seasoning in a bowl together, rather than dipping to coat. Also, it makes twice as much food as I thought it would. 'Two servings' could easily feed four.
Lifeimproves 1 month agoI use sour cream instead of heavy whipping cream and use about 2/3 the amount. I use diced tomatoes (with liquid) in place of sun-dried tomatoes. The cajun seasoning recipe on Big Oven is great for this. My family loves this!
missycomeaux 1 month agoMade this tonight for the family, it was a HUGE hit! I did add about 1 tbs of cream cheese to the sauce and went a little easy on the salt. I also sautéed the green onion with some garlic at first, set that aside then cooked the chicken.
mahddi 1 month agoI made it for my wife and she loved it. I had two faults btw: 1. i had forgotten to slice the chicken and, 2. i didn't follow the measurements, but it was really yummy though. i highly recommand it.

kenziemay29 2 months agoThis is super tasty, not too spicy either. I put the tomatoes in the blender to purée for picky eaters and it was still excellent. The chicken is delicious
