Creamy Cajun Chicken Pasta

Creamy Cajun Chicken Pasta

Ready in 25 minutes

A labor of love over the years to figure out how to make my favorite Cajun Pasta dish that's found at The Cheesecake Factory. I believe I'ts a success! It's really, really hard to stop eating this heady dish..

"This was really tasty. I made it for six servings and used 4t Cajun seasoning instead of the 6 the increased ingredient list called for; only b/c we had a guest with the palette of a child. :)

There was only a little left over and I had those mixed w/green peas for lunch the next day. A keeper."

Ingredients

Are you making this?
2 boneless skinless chicken breasts; cut into thin strips
4 ounces linguine; cooked al dente
2 teaspoons cajun seasoning
2 tablespoons butter
1 thinly sliced green onion
1 cup heavy whipping cream; (1 to 2)
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/4 cup grated parmesan cheese

Preparation

First, we get the pasta al dente:

The process is very simple. Boil 4-6 cups of water (with about a teaspoon of salt). Once the water is boiling put the linguini in the pot. DO NOT BREAK THEM. As they heat up they will bend. Help them with a kitchen fork by stirring slowly. Make sure your water is boiling all the time. Sometimes when you add the linguini, the water stops bubbling. Raise the temperature a bit, and then lower it once you get it boiling again. You should cook the linguini at medium temperature average. Depending on how cooked you want your linguini, this takes place in 8-10 minutes. Most people prefer "al dente". Thsi means, that point where the pasta is not raw anymore but still has a nice hard texture. Once the time is passed, rinse to get rid of the water. Voila!

Place chicken and Cajun seasoning in a bowl and toss to coat.

In a large skillet over medium heat, saute chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.

Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.

Pour over hot linguine and toss with Parmesan cheese.

Delicious. I used smoked semi dried tomatoes and doubled the amount and also added some diced vegies to bulk the meal up.

This was very delicious! I will definitely make this again. To simplify I cooked the chicken in butter and olive oil and sprinkled the Cajun seasoning on the chicken while in the pan. Then I followed the recipe as is. Next time I would followed throw on some fresh mushrooms. Very tasty!
