Great with Sag Paneer.
Add the dry yeast and sugar to the warm water and stir until the yeast is dissolved. Cover and set aside for 10 minutes or until the mixture begins to froth. This indicates the yeast is active.
Mix the flour and salt and sift through a very fine sieve. Put it into a large mixing bowl and now add the yeast mixture, 4 tablespoons of ghee, and all the yogurt.
Knead the dough on a lightly floured surface until it is smooth and elastic (about 10 minutes).
Grease a large bowl with a few drops of oil and put the dough in it. Cover and allow to rest for about 1.5 - 2 hours or until the dough doubles in volume.
Put a pizza stone on the lowest rack, removing the other racks for easier access to the stone. Heat the oven to 500 degrees. Wait 20 - 30 additional minutes before cooking the naan to allow the stone to be completely heated.
Punch the dough down and knead slightly. Place dough in the refrigerator until ready to bake.
Equally divide the dough into 8 pieces. Roll into balls.
Very lightly flour the same surface on which you kneaded the dough until you have an oval less than .25" thick.
Turn the oven to broil and place the naan on the stone. The naan will puff up. Cook until it is puffed and has brown spots. Brush both sides of the naan with melted butter. Turn a stove burner to a low flame. Place the buttered naan directly on the burner cage and cook to create the charred spots typical of naan.
