Heat the oil in a medium-size saucepan over a moderate heat, & brown the minced beef.
Add the garlic, onion, carrots & celery, & cook until the vegetables are softened, but not browned - approximately 15 minutes.
Add the chopped tomatoes, puree, beef stock made up with 150ml boiling water, red wine & bay leaves, stirring continually.
Reduce the heat & cook until the carrots & celery are soft to the bite - around 1 - 1 ? hours.
From time to time stir the sauce & mash with a potato masher to break up the meat & tomatoes for a really rich flavour. Remove bay leaves just before serving.
Cook the pasta in a saucepan of boiling water according to the pack instructions. Drain & serve with the bolognese sauce, garnish with torn basil leaves & parmesan cheese.
