This is the bread stuffing that I've been making for 40 years.
Boil and mash potatoes, if using, adding a small amount of butter and milk if desired. Set aside. Melt the butter in frying pan and add the onions. Cook until transparent. Stir in some of bread cubes to soak up butter. Turn into large bowl and mix in remaining bread cubes, celery, herbs and either mashed potatoes or broth. Cool stuffing until ready to put in turkey or bake in covered casserole dish for about an hour at 325 degrees.
Home grown sage, fresh or dried, makes all the difference. If using fresh sage, roll the leaves and chop them.
