These were the cookie winners from a cookie contest Martha had years ago. They are relatively simple to make and absolutely delicious.
1. Sift together flour, cocoa powder, baking soda and salt in one bowl. Set aside.
2. In the bowl of an electric mixer fitted with the paddle attachment, beat butter, 2 cups sugar, and eggs on medium speed until light and fluffy. (about 2 minutes)
Add vanilla extract and mix to combine. Gradually add dry ingredients, and combine with the mixer on low speed.
Cover bowl with plastic wrap and chill until dough is firm (about 1 hour).
3. Preheat oven to 350 degrees F. Line baking sheets with Silpat or parchment paper. Roll dough into 1 in balls. Dip the top of each one into sugar.
Place on prepared baking sheets (sugar coated side up) about 1 1/2 inches apart.
Bake until set, about 8 minutes. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
I just started using silpat and I absolutely love it for this recipe. And...Make sure you let the cookies cool on the baking sheets for 5 minutes before removing, otherwise they are so soft and chewy they have a tendency to smoosh up.
