|2 Tbsps.Olive Oil|
|3-4 piecesBoneless; skinless; Chicken Breasts|
|2-3 shakesSeasoned Salt or other Chicken Seasoning|
|6 LargeCarrots; sliced on the diagonal|
|5 piecesScallion; green and white sliced thin|
|2 mediumzucchini; cut in half and sliced|
|1 large candiced tomato with basil and garlic|
|1 largebox chicken broth|
|1 smallcan chicken broth|
|1/2 boxditalini pasta|
Italian Chicken Vegetable Soup Preparation
In large pot heat olive oil.
Add bite size pieces of chicken and seasoning. Stir until cooked. (5-8 minutes)
While chicken is cooking, peel and slice carrots. Cut on diagonal or slice thin. Add to pot and cook 5 minutes.
Chop scallions; both green and white section. Add to pot.
Cut zucchini lengthwise and then slice into thin pieces. Add to pot; stir 5 minutes.
Add chicken broth and diced tomatoes.
Cook approxiametly 1 hour.
Add ½ box Ditalini and cook additional 10-12 minutes.
