Wonderfully comforting rice pudding dessert that is yummy all year long.
1. Rinse rice per instructions.
2. In a saucepan, combine milk (whole or 2%), rice, sugar and salt (if desired); bring to a boil over medium heat, stirring constantly.
3. Pour into a greased 1 1/2 quart baking dish. Cover and bake 325 degrees F for 45 minutes, stirring every 15 minutes. Add vanilla and cover again and bake for a final 10-15 minutes.
4. Place in dessert dish/cups and sprinkle with cinnamon.
5. Serve warm or chilled.
6. Store in the refrigerator
