Easy casserole, perfect for a picnic.
Preheat oven to 350 degrees F (175 degrees C). Cook bacon in a skillet over medium-high heat until crisp and evenly brown; drain. Chop bacon, and set aside.Melt butter in a large skillet over medium heat. Add the corn, and cook for about 5 minutes, stirring constantly. Stir in the bacon and salt, and remove from heat.
Transfer corn mixture into a 1-quart casserole dish, then add tomatoes and suger. Mix together. Bake uncovered in preheated oven for 20min. Remove from oven and sprinkle bread crumb mixture over top. Return to oven for 10 more minutes.
It makes 5 servings, but once you taste it you might wish you had doubled the recipe. ;)
