Heat milk in saucepan until hot. Add optional flavourings and bring milk to boil.
Remove from heat, cover and leave for 10 mins to infuse.
Strain to remove flavourings.
Melt butter in a heavy saucepan until it begins to foam.
Whisk in flour and cook. Stir all the time until foaming - about a minute.
Remove pan from heat - add half the hot milk, whisking continuously.
Return pan to heat and whisk until the sauce begins to thicken.
Add the rest of the milk off the heat and whisk.
Return to the heat whisking constantly until the sauce thickens.
Season to taste with nutmeg, salt and pepper.
Simmer for a further 2-3 minutes.
