Combine flour, baking powder, salt ad sugar in a large bowl. Make a well in the center and add oil. Mix thoroughly. Add water slowly, mixing until you obtain a consistency which may be easily rolled. Let dough rest for 5 to 10 minutes. Fold dough on a lightly floured work surface and cut into rounds. Spoon filling into the center, and fold dough over to encase it. Seal by pressing tightly with your fingers. Fry in deep fat a minute or so on each side until golden brown. Drain on a paper towel and serve hot or cold.
SPICY CHEESE FILLING FOR EMPANADAS:
Combine cheese and egg. Mix in hot sauce, nuts and paprika. Keep refrigerated if made in advance, but bring up to room temperature prior to filling pastries.
Make a little more than 2 cups.
This recipe makes 12 six-inch empanadas or 24 three-inch starters.
You can actually stuff them with anything; ham & cheese, spinach & ricotta, meat, the list is endless.
