Mandarin orange cake with pineapple frosting. Very light and fluffy cake with sweet light frosting. The pineapple frosting is similar to watergate salad if you like that flavor/texture (minus the marshmallows).
Cake Instructions
Mix all ingredients in mixing bowl
• Cake mix
• can of oranges (with juice)
• 3 eggs
• ½ cup of vegetable oil
Mix until smooth
Pour into greased cake pan
Bake at 375 for 16-25 minutes depending on your oven (check @ 16 minutes)
Remove cake from pan and let cool on rack/plate before adding frosting
Frosting Instructions
Mix all ingredients in mixing bowl
• ¾ tub of cool whip
• 1 box vanilla instant pudding
• 1 can crushed pineapple (with juice)
Place in fridge to cool while cake cools on rack/plate
If you use less oil it makes the cake less moist, but probably less fatty. I have replaced the oil with applesauce in other cakes, but I have not done so with this cake due to the fruit juices already in it. I would like to find out what happens, but don't have the guts to try it just yet!
