Very tasty, easy salad. Roasting the walnuts makes all the difference!

| 1 pkgspinach leaves |
| 1 cupsweetened, dried cranberries |
| 1 pkgfeta cheese; crumbled |
| 1/2 cupwalnuts; coarsely chopped |
| 2 tbsbalsamic vinegar |
| 1 tbsliquid honey |
| 1 tspDijon mustard |
| 1/4 tspblack pepper; ground |
| 1/4 cupextra virgin olive oil |
Cranberry, Feta and Toasted Walnut Salad Preparation
Salad:
Wash & rinse spinach and layer in salad bowl with cranberries & feta cheese. In a small, dry frying pan, heat walnuts over medium-high heat for 5 - 7 minutes until just toasted. Toss with salad ingredients.
Dressing:
Whisk vinegar, honey, mustard, and pepper in small bowl. Slowly add oil in a thin stream, whisking constantly until well blended. Pour over salad, toss and serve.
Notes
Toasting the walnuts brings out a great texture and full nutty flavour, so don't skip that step. I use this dressing on all my salads now!
