Vegetarian Walnut Burgers

This recipe is so good, even meat eaters enjoy it! A tasty, roasted, nutty flavour and great texture, holds together well.

1 cupred lentils
2 cupswater
1 tbsolive oil
1 cuponion; finely chopped
4 clovesgarlic; minced
1 tspcumin; ground
1/2 tsp eachsalt
1 cupwalnuts; finely chopped
1 cupcremini mushrooms; finely chopped
1/4 cupcilantro; finely chopped
1/2 cupfresh bread crumbs
1/2 tsp.Black pepper

Vegetarian Walnut Burgers Preparation

1.

In a small sauce pan, bring lentils and water to boil over medium-high heat. Reduce heat to simmer, cover and cook until all water has been absorbed, about 15 minutes. Remove from heat and let cool.

In a skillet, heat oil over medium-high heat; cook onion until tender, about 5 minutes. Stir in garlic, cumin, salt and pepper; cook 1 minute. Stir in walnuts and mushrooms; cook until mushrooms are completely tender and no liquid remains, about 5 minutes. Let cool slightly. Stir in cilantro, bread crumbs and lentils. Form into patties.

Grill over medium heat on greased grill, turning once, until crisp and golden on each side, about 12 minutes total.

Serve on grilled whole grain buns with your favourite burger toppings, or with cucumber, tzatziki and tomatoes.

Notes

It's important to use red lentils in this recipe, as they cook quickly and are the right texture for the patties to stick together. Other lentils don't hold together as well, and take much longer to cook.

I love these. I did add 2 egg whites as a binder and they held up beautifully. The flavor is really good. I also doubled the recipe so that I can freeze some of them. Thanks for the great recipe!
