Great right from the oven as a veggie entree as well as a side dish, a few days later. Consider adding or substituting Eggplant, zuchini squash and others.

4 Layer Southern Garden Delight Preparation
Wash and rinse all vegetables and herbs. Allow to dry. Cut off ends, slice and set aside. Rub butter over surface of glass casserole dish (9"-ish by 14"-ish).
Lay a layer of Zuchini (or Squash; feel free to mix it up between the Yellow, green & purple veggies mentioned above) into the dish. sprinkle liberally with Mozarella cheese, dust with a layer of Parmesan and a sprinkling of herbs. sprinkle with a bit of extra virgin olive oil if desired.
Repeat with each veggie layer. The included picture from bottom to top used Squash, Zuchini, Onion & Tomato.
The second to the last layer should be your onion and the final one the tomato slices.
Place into preheated oven at 350 F degrees. Back at least 20 minutes and look for slight browning & bubbling around the edges. Broil for a minute or so to taste, if desired. If baking this with another dish, time will be approximately 30 minutes.
Notes
Cover with aluminium foil and refrigerate. Bake at 325f for 25 mins up to two days later.
