Original recipe makes 6 Servings
8 ozUdon Noodles; dried, uncooked
1/4 cuprice vinegar
2 Tdark sesame oil
2 Tlow-sodium soy sauce
1 Thoney
2 tspchile paste w/ garlic
1/2 tspfresh ginger; ground
2 cupchicken breast; shredded, skinless
2 medcucumbers; halved lengthwise & sliced
6 Tgreen onion; chopped
3 Tdry-roasted peanuts; chopped

Cold Sesame Noodles w/ Chicken and Cucumbers Preparation

1. Cook noodles according to package directions, omitting salt and fat. Drain and rinse under cold water.

2. Combine rice vinegar and next five ingredients (thru ginger) in a large bowl, and stir with a whisk. Add noodles, chicken and cucumbers to bowl; toss gently to coat. Top with green onions and peanuts.

Notes

Soba is a good replacement for Udon Noodles.
