This is a vegetarian-friendly recipe, but if desired your could add ground or shredded beef, or shredded chicken, to it.

| 6 8-inchflour tortillas |
| 1 teaspoonchili powder |
| 3/4 teaspoonpaprika |
| 1/4 teaspoononion salt |
| 1/2 teaspooncrushed red pepper |
| 2/3 cupgreen onion; chopped |
| 1/3 cupyellow bell pepper; chopped |
| 16 ouncesrefried beans; canned |
| 1/2 cupcolby cheese; shredded |
| 1 cupsalsa; mild/medium |
| 1/2 cupcheddar cheese; shredded |
mexican tortilla pizza Preparation
Preheat oven to 350 degrees.
Coat aluminum foil or a cookie sheet with non-stick spray.
Spread tortillas out on cookie sheet or aluminum foil. (I bake two at a time.)
Put tortillas in oven and heat at 350 for about 8 minutes.
Remove tortillas from oven.
Combine chili powder, paprika, onion salt and crushed red pepper.
Spread refried beans evenly over tortillas.
Sprinkle colby cheese over beans.
Sprinkle green onion and yellow pepper over colby cheese.
Spread on salsa sauce.
Top off with cheddar cheese.
Cook in 350 degree oven for 12-16 minutes.
Eat!
Notes
You can add/remove toppings. For instance, sometimes I substitute pepper jack cheese for the colby cheese when I want some extra spice.
