1 1/2 pound Ground beef
1 medium Onion; chopped
3 cloves Garlic; minced
3 medium Jalapeno peppers; sliced
1 can (16 oz) Stewed tomatoes; undrained
1 can (10 oz) Enchilada sauce
1 can (16 oz) Kidney beans; drained
2 teaspoon Cumin
1 medium Egg; beaten
1 teaspoon Chili powder
1 1/2 cup Cottage cheese
3 cup Mexican style shredded cheese
8 medium Flour tortillas; cut in half
1 cup Shredded chedar cheese

Original recipe makes 10 Servings



- In a large skillet cook the beef, onion, jalepenos, and garlic untill meat no longer pink

- drain

- stir in tomatoes, enchilada sauce and cumin, kidney beans, chili powder

- Bring to boil

- Reduce heat, simmer uncovered for 20 min

- In a small bowl, combine egg and cottage cheese

- preheat oven to 350

- In a greased deep 9x9 baking dish placed 1/3 of the meat sauce

- layer with half the cheese blend, cottage cheese, and tortillas

- repeat with remaining ingredients endding with meat sauce

- Sprinkle with cheddar cheese

- Cover and bake for 20 min

- uncover and bake for 10 min

- increase heat to broil untill browned ontop

- remove and let stand for 15 min before serving
