1 1/2 lbstomatos; peeled and quartered
1 bunchscallions; chopped (use green & white)
1 largecucumber; peeled, seeded, and finely chopped
1/2 cupbasil; fresh and finely chopped
1 tbspextra virgin olive oil
1 tbspred wine vinegar
1/4 cupwhite wine
salt and pepper; to taste

Cold Tomato and Cucumber Soup Preparation

Use a blender, food processor, or immersible blender to combine tomatoes and scallions until smooth consistency. Place into a bowl. Add the remainder of the ingredients. Mix well. Cover and refrigerate for at least an hour. Serve cold when ready.
