Ingredients
| 1 1/2 lbstomatos; peeled and quartered |
| 1 bunchscallions; chopped (use green & white) |
| 1 largecucumber; peeled, seeded, and finely chopped |
| 1/2 cupbasil; fresh and finely chopped |
| 1 tbspextra virgin olive oil |
| 1 tbspred wine vinegar |
| 1/4 cupwhite wine |
| salt and pepper; to taste |
Cold Tomato and Cucumber Soup Preparation
Use a blender, food processor, or immersible blender to combine tomatoes and scallions until smooth consistency. Place into a bowl. Add the remainder of the ingredients. Mix well. Cover and refrigerate for at least an hour. Serve cold when ready.
