Curried Noodles with Tofu
|6 ouncesuncooked rice sticks, angel hair pasta or vermicel|
|1 cuplight coconut milk|
|2 tablespoonssoy sauce|
|1 1/2 tablespoonscrushed ginger|
|2 teaspoonsminced garlic|
|1 teaspoongreen curry paste|
|1 12.3 oz packageextra firm tofu, drained and cut into 1-in cubes|
|1 cupred bell pepper strips|
|4 cupsshredded napa (chinese) cabbage|
|1 cupchopped green onions|
|3 tablespoonschopped fresh cilantro|
Curried Noodles with Tofu Preparation
Place noodles in a large bowl. Add hot water to cover; let stand 5 min. Drain.
Combine coconut milk, sugar, soy sauce, ginger, garlic, curry paste, and salt in a small bowl.
Heat a large nonstick skillet coated with cooking spray over med-hi heat. Add tofu; saute 10 min or until golden brown. Remove tofu from pan; keep warm.
Add bell pepper to pan, saute 1 min or until crisp-tender. Add cabbage; saute 30 sec. Stir in noodles, coconut milk mixture, and tofu; cook 2 min or until noodles are tender. Stir in green onions and cilantro.
