Curried Noodles with Tofu
Ingredients
Original recipe makes 4 Servings
| 6 ouncesuncooked rice sticks, angel hair pasta or vermicel |
| 1 cuplight coconut milk |
| 1 tablespoonsugar |
| 2 tablespoonssoy sauce |
| 1 1/2 tablespoonscrushed ginger |
| 2 teaspoonsminced garlic |
| 1 teaspoongreen curry paste |
| 1/2 teaspoonsalt |
| 1 12.3 oz packageextra firm tofu, drained and cut into 1-in cubes |
| 1 cupred bell pepper strips |
| 4 cupsshredded napa (chinese) cabbage |
| 1 cupchopped green onions |
| 3 tablespoonschopped fresh cilantro |
Curried Noodles with Tofu Preparation
Place noodles in a large bowl. Add hot water to cover; let stand 5 min. Drain.
Combine coconut milk, sugar, soy sauce, ginger, garlic, curry paste, and salt in a small bowl.
Heat a large nonstick skillet coated with cooking spray over med-hi heat. Add tofu; saute 10 min or until golden brown. Remove tofu from pan; keep warm.
Add bell pepper to pan, saute 1 min or until crisp-tender. Add cabbage; saute 30 sec. Stir in noodles, coconut milk mixture, and tofu; cook 2 min or until noodles are tender. Stir in green onions and cilantro.
