This is a great pasta salad that I take for lunch on a bed of lettuce or have for dinner when I need to make something easy and fast.

Original recipe makes 4 Servings
2 smallsweet peppers; cored and chopped
1/2 cupEnglish Cucumber; chopped
1/2 cupGreek Olives; chopped
1/2 cupFeta Cheese; chopped
1/3 cupItalian Parsley; minced
1/3 cupred onion; minced
Olive oil or your favorite salad dressing; If you use salad dressing make sure it is oil based not creamy
2/3 boxBarilla Orzo

Sarah's Summer Pasta Salad Preparation

Combine first 6 ingredients in large bowl. Cook pasta as directed on box. Once pasta has cooled add to ingredients in bowl. Mix thoroughly; next, add olive oil or salad dressing to your liking. Serve by itself or over a bed of lettuce.

Notes

We usually add about 2/3 box of pasta, but it depends on the pasta to vegetables ratio that you prefer. I would start out adding 1 to 2 cups of pasta and continue to add until you have the ratio you would like. I would do the same with the dressing, begin with a few tablespoons and add more as you see fit.
