Original recipe makes 5 Servings
2 cupselbow macaroni
3/4 cupheirloom tomatoes; diced, about 2 large tomatoes
1/4 cupbasil; cut chiffonade style
1/4 cupfeta cheese; crumbled
1 small handfulolives; any type, halved
2-3 tablespoonolive oil
salt and pepper; to taste

Italian Macaroni Salad Preparation

Cook pasta according to package directions. Let them cool completely.

Combine all but the last three ingredients in a large bowl.

Pour olive oil over the salad and stir to combine. Season with freshly ground pepper and salt to taste.

For a heartier main dish, add artichoke hearts, tofu, or chickpeas.
