Original recipe makes 12 Servings
1 boxorzo pasta
2/3 cupfeta cheese crumbles (or more)
1 smallred onion; finely diced
8-10 leavesfresh basil; chifanade
1 cupcherry tomatoes; halved
Vinaigrette
1/2 cupExtra Virgin Olive Oil
2 TBSred wine vinegar
2 TBSbalsamic vinegar
1 heaping tspdijon or spicy mustard
1 tspCavender's Greek Seasoning; adjust as needed

Greek Orzo Pasta Salad Preparation

Cook pasta according according to directions on box. This pasta salad is best with ORZO pasta but any pasta can be substituted.

Finely dice the red onion. Chifanade the basil. Cut the cherry tomatoes in half. Set all items aside.

Make vinaigrette: Add all ingredients and whisk together. Set aside.

After pasta is finished, drain and rinse with cold water. Once pasta is cooled with water, drain well and place on large baking sheet and spread out to evenly distribute. Place in refrigerator and let completly cool down (appx. 20 min.).

Place pasta, feta, red onion, basil and tomatoes in large mixing bowl and mix together until all items are well integrated. Pour vinegrette over and stir together. If you like, you can add more vinaigrette to make a "wetter" pasta salad. Can be eaten right away but it's always better the longer it has to let the flavors really blend. 1 hour in fridge is best.

Notes

I usually double this recipe when cooking for a BBQ or party since this is so good and goes really fast! All ingredients are subject to more or less according to your discretion depending on your taste or mood.
