"This was good. The apples were left out of the ingredients but DO NOT use green applies. They are too tart and don't add any color to the dish so it's all green. A sweet apple like a red delicious would be much better. It makes a lot of dressing but I saved it to use on other salads." - jlburgart

1/4 cupShallots; chopped
1/4 cupUnfiltered Apple Juice
2 tbspApple Cider Vinegar
2 1/2 tbspRoasted Walnut Oil
1/2 tspKosher Salt
5 ouncesBaby Arugula; (about 6 cups)
1 bulbFennel; halved & thinly sliced
3/4 cupWalnut Pieces; toasted

Apple-fennel salad with walnuts Preparation

Whisk together shallots, juice, vinegar, oil, and salt in a large bowl. Add arugula, apples, and fennel, tossing gently to coat in dressing. Transfer salad to a serving bowl and top with walnuts.
