I tried this and thought it was just ok. I used light mayo because that's all I had in the house. I also didn't have any Italian seasoned breadcrumbs so I took plain panko breadcrumbs and seasoned them myself with salt, pepper and Italian seasoning. Perhaps that's why I wasn't overly thrilled with the crumb seasoning. It may have needed more salt. In addition to mixing in freshly grated parmesan cheese, I also put in some onion and garlic powder into the mayo mixture. That turned out fairly well. My family ate it without complaint, which is a miracle, although my 3 kids were wondering what the creamy stuff was under the crumbs. They don't like mayo, but they couldn't tell what it was with this recipe; they thought it was creamy cheese. I'd make it again using preseasoned breadcrumbs and see if I enjoy it more. It wasn't bad, but I just didn't think it was fantastic.

Fantastic! Made this for dinner tonight and we all loved it (kids included). Easy, quick and tasty. Can't ask for more than that! Next time I'll lower the temperature a little (maybe down to 400) as the bread crumbs started to brown too much and I had to pull it out of the oven earlier than I'd planned.
