Homemade crepes filled with a delicious strawberry, cottage cheese and cream cheese blend. Delicious!
1. Prepare Crepes from "Regular Crepes" recipe
2. Combine in a small bowl, with mixer at medium speed, cottage cheese, cream cheese, sugar and vanilla extgract until smooth. Measure about a Tablespoon of mixture on each crepe to within 1/2 inch of edge; fold two sides of each crepe slightly toward the center then roll in opposite direction, relly-roll fashion.
3.Preheat oven to 350 degrees F. In large, shallow baking dish or in a jelly roll pan, melt butter. Remove from oven. Arrange blintzes in one layer in pan. Bake 10 minutes until heated through. Serve topped with Strawberries.
