Original recipe makes 4 Servings
1 Wholeonion; diced
1 Bagpasta
1 Packstreaky bacon; chopped
6 Sprinkleschili flakes
1/2 Cupolive oil
1 Bagbaby spinach leaves
1/2 Cuphot water
2 Teaspoonsalt

Spinach and Pasta Preparation

Put diced onions and chopped bacon into the pan and stir around for about 5 minutes on high until it's all mixed up and separated nicely.

Leave with lid half on for 2 minutes to cook, then mix up and do the same for a further 2 minutes for the other side.

Shake the chili flakes on and pour on the oil. Mix up and turn down pan as low as it goes and leave for 5 minutes while you boil water for the pasta.

Turn the pan back on full and put in the spinach leaves with the half cup of hot water. Put the lid on firmly until the spinach has been steamed.

When water for pasta is boiled, put in salt and then put pasta in for however long the bag says for. Mix the pasta for about 1 minute so it doesn't stick together.

Wen pasta is finished, put it through a colander and wait for it to cool for about 1 minute.

Notes

I usually just put the oil in by feel, keeping in mind that the bacon will give off fat swell while it is cooking.

Do not put the salt into the pasta water before it is boiled because this will make it take hours to come to a boil, only put in once it has boiled.

This goes great with Parmesan grated over the top of it.
